Almond Butter

Whether you use it in sauces or spread on flax crackers or raw breads, almond butter is a great condiment to have in the kitchen. Because it will ask a lot of your food processor, you may wish to buy it instead but just make sure it's raw if you do and the almonds haven't been roasted.

Ingredients
2 cups almonds
2 tablespoons honey
1/2 teaspoon sea salt

Method
1. Place the almonds only in the food processor (not blender), and mix for ten minutes. You will need to periodically stop and scrape the sides down, but you must blend for ten minutes to allow the oils to come out and the nuts to change into a paste like substance. Keep an eye on your food processor! If you think it needs a rest, give it one then start again.
2. Once the consistency is obtained, transfer to a bowl and mix through the honey and salt.
3. Pop it in a sealed jar and keep in the fridge.
